Whole Hearted: 6 Valentines Day Recipes That Won't Put You In A Chocolate Coma

Whether you are single or in a relationship, Valentine’s Day is a day of indulgence. It is the national holiday that makes it acceptable to eat entire bars of chocolate and bags of Dove squares. Those rows of chocolate lining the isles of every supermarket and drugstore across the country have been tempting us since they were stocked the day after Christmas, but February 14th is the day that Americans will buy 58 billion pounds of chocolate… I can’t count all of the Valentine’s days where I’ve over-indulged. This year is going to be different. If you’re like me and are looking to wake up this February 15th without a massive chocolate hangover, I’ve got a solution for us. Here’s a little list of some delicious love-themed treats that won’t knock you down for the count.

1. I egg-dore you!

Prep Time: 5 minutes Cook Time: 3 minutes Devour Time: 53.7 seconds

This adorable breakfast takes 7 minutes to make and is guaranteed to put a smile on all faces involved. What is cuter than serving an egg in a heart? Starting of the day in a sweet way, metaphorically!

What you’ll need:

✩ One large egg

✩ Bread of your choice

✩ A heart Shaped cookie cutter

✩ Olive oil/butter

Instructions

Step 1: Take heart shaped cookie cutter and punch out the middle of the bread.

Step 2: Heat a pan to medium heat, spray it with oil and lay the bread in the pan.

Step 3: When the bread is brown and toasted, flip the bread.

Step 4: Crack the egg into the heart, and cover until egg is cooked.

Step 5: Voila! The ILY egg is ready.

2. A Chocolate Chip Gets Hugged By A Raspberry

Prep time: 5 minutes Devour time: 3 seconds

A little pop of chocolate hugged in a raspberry. All you need is chocolate chips and fresh raspberries! Just take chocolate chip, put it inside the raspberry’s little pouch and you have a mouthwatering, nutritious, sexy little snack! Raspberries contain high levels of Vitamin C, are packed with antioxidants and are high in ellagic acid which has anti-inflammatory properties! A chocolate chip swaddled in health!

All ya need is…

✩ Semi-sweet chocolate chips.

✩ Fresh raspberries.

3. Paleo Strawberry Chocolate Chip Cookies

Let’s be real….what is Valentine’s Day without strawberries and chocolate? The strawberry is like the mascot of Valentine’s day! So leaving out a chocolate/strawberry paired recipe from this list would be cruel. These paleo cookies are a delicious, yet healthy choice if you are craving the staple Vday treat.

Ingredients:

✩ ¾ cup of melted coconut oil

✩ ¾ cup of coconut sugar

✩ 1 large egg

✩ 2 tsp vanilla extract

✩ 1 Cup almond flour

✩ 1 tsp baking soda

✩ ½ tsp salt

✩ Mini chocolate chips

✩ ½ cup freeze dried strawberries

Instructions:

Preheat the oven to 350 Degrees F

Step 1: Mix together coconut sugar and coconut oil in a large bowl.

Step 2: Add and beat the egg into the sugar/oil mix

Step 3: In another bowl, mix the almond flour, freeze dried strawberries, baking soda and salt.

Step 4: Combine the wet and dry ingredients and mix. Add the chocolate chips.

Step 5: Grease your pan and roll the dough into little balls.

Step 6: Bake the cookies until they are golden brown, about 10 minutes.

Step 7: Move the cookies to a cooling rack to cool down and enjoy!

4. Paleo/Vegan Lavender Green Tea Lemon Bites

Prep Time: 15 minutes Bake Time: 15 minutes Devour Time: 13 seconds

These dainty cookies are beautiful mix of flavors and they check off all your boxes: gluten free, refined sugar free, dairy free, vegan, and delicious! They are incredibly simple and easy to make-- with very few ingredients.

Ingredients:

✩ 1 tbsp chia seeds.

✩ 3 tbsp water.

✩ 1.5 cups of almond meal or almond flour.

✩ ¼ tsp sea salt.

✩ ¼ tsp baking soda.

✩ 3 tbsp maple syrup.

✩ 2.5 tbsp coconut oil.

✩ 2 tsp vanilla extract.

✩ 1 tsp lavender green tea, loose leaf.

✩ 1 tsp lemon zest.

Instructions:

Step 1: Mix the chia seeds and water together to make a paste, this is a fantastic vegan substitute for an egg! Life hack right there.

Step 2: Crush up the lavender tea into fine bits.

Step 3: Mix together the almond flour, baking soda, salt and lavender.

Step 4: Add maple syrup, coconut oil, vanilla, lemon zest and chia paste until it is mixed well and resembles dough.

Step 5: Transfer to the fridge and set the oven for 325 Degreesº Fahrenheit.

Step 6: After about 10 minutes, remove the dough from the fridge and grease your cookie sheet with coconut oil.

Step 7: Form little balls and press them down onto the cookie sheet. They can be close together, they don’t spread.

Step 8: Put a bit of lemon zest on top, and put in the oven for 15 minutes, or until golden and crispy on the edges.

Step 9: Let cool, and then plate or baggy them up to give as a pretty little VDay gift!

5. Cacao Bliss Balls

Prep Time: 10 minutes Devour Time: 23 seconds

You truly will feel blissed out when you pop one of these into your mouth. These little guys are delicious, filling and nutritious. They’re your healthy version of a chocolate truffle!

What you’ll need:

✩ 1.5 cups of roasted, unsalted almonds.

✩ 1.5 cup of pitted dates.

✩ ⅓ cup of cacao powder.

✩ ⅓ cup of hemp shells.

✩ ½ teaspoon sea salt.

✩ 1 tsp vanilla extract.

Instructions:

Step 1: Place all ingredients in a food processor, and pulse until there are no chunks left

Step 2: Mold the mixture into balls and put in the fridge.

Step 3: Enjoy!

6. Love Bark

Prep Time: 15 minutes Cool Time: 2 hours Devour Time: 13 seconds

Chocolate bark is one of my vices, I can inhale a whole tree’s worth! Although you can make bark with any toppings, this recipe is healthy Valentine’s day themed.

What you’ll need:

✩ 2 bars of dark chocolate (at least 70% cacao.)

✩ ½ cup of dried cranberries.

✩ ½ cup of slivered almonds.

Instructions:

Step 1: Chop up your chocolate finely.

Step 2: Microwave to melt the chocolate for 30 seconds. Pro Tip, stir the chocolate when. you take it out of the microwave so your bark will be glossy and shiny.

Step 4: Line a baking tin with parchment paper and spread the chocolate across it.

Step 5: Top the chocolate with the cranberries and almonds.

Step 6: Set aside in fridge for at least 1-2 hours.

Step 7: Enjoy at room temp.
